Taco Soup

1 1/2 lbs of ground beef
1 can yellow hominy
1 can diced Rotel (Original)
2 can ranch style pinto beans
2 cans coke size tomato juice
1 pkg taco seasoning
1 pkg ranch seasoning

Brown meat, combine all ingredients and seve with chips..........

Chipotle - Black Bean Soup

1 cup dried black beans
1/2 cup boiling water
1 chipotle chili
1 tsp olive oil
1/4 cup minced onion
1 minced garlic clove
2 cups water
1/4 tsp oregano
1/8 tsp cumin
1 16 oz chicken broth
1/4 tsp red pepper (optional)
1 14.5 oz can diced tomatoes with green chiles (Rotel original)

Sort and wash beans, place in large pot, cover beans to 2 inches above beans, bring to boil cook 2 mins, remove from heat and let stand 1 hour, drain.

heat oil, add onion and saute until tender, add garlic, beans chipotle chili, 2 cups water, oregano, cumin and broth. Cook 3 hours until beans are tender, stir in tomatoes/chilis at the end and heat thru.

Beef and Chicken Fajitas with peppers and onions

Marinade:
1/4 cup olive oil
1 tsp Lime rind
2 1/2 tsp lime juice
2 TBL Worcestershire sauce
1 1/2 tsp Cumin ground
1 tsp salt
1/2 tsp oregano
1/2 tsp black pepper
2 garlic cloves chopped
1 14.5 oz can of beef broth

Fajitas:
1 (1lb) flank steak
1 pound skinned boned chicken breast
2 red bell pepper cut into wedges
2 green bell pepper cut into wedges
1 large onion cut into wedges
cooking spray
Corn/flour tortillas
1 cup bottles salsa
sour cream
1/2 cup fresh cilantro

to prepare marinade combine first 10 ingredients in a large bowl.

to prepare Fajitas, trim fat from steak, score a diamond pattern on meat on both sides. Put 1 1/2 cups of marinade in zip lock back and add chicken, beef and vegtables. Marinate for 4 -24 hours turning bag several times.

prepare grill:
remove steak, chicken and vegtables discard marinade in bag. Cook chicken and beef on grill, vegtables can be cooked on stove top of grill as well. Cut steak and chicken across the grain into thin slices. Place on a platter and drizzle with remaining marinade.

Egg, Blue Cheese and Bacon Sandwiches

1/2 cup cooked bacon ( you can use the packaged kind found in the salad dressing section)
5 hard boiled eggs
4 oz crumbled blue cheese
1 lemon zested
1/4 cup Hellmans Mayo
1/2 cup chopped chives
black pepper to taste (1/4 tsp)

mix all together and spread on toasted bread.

Angie's Fruit Salad

1 large jar cherries
2 large cans mandarin oranges
2 granny smith apples chopped( squeeze lemons over)
2 cups green grapes
2 cups chopped strawberries
1 cup blueberries

Mix: 8 oz cream cheese, 1 cup of orange juice and 2 TBLS of Sugar until smooth, mix gently into fruit

pimento cheese

1 cracker barrell extra sharp cheese shredded
15 pimento stuffed olives chopped
3/4 cup chopped pecans
1/4 teasp black pepper
2 TBLS minced onion
1/2 cup to 3/4 Hellmans Mayo

Mix all together and serve on crackers of bread

Chocolate Yum Yum

1 Box if Graham Cracker Crumbs
2 sticks of butter
1 cup chopped pecans
Mix all together and press in bottom of 9x11 dish, cook 350 degrees for 15 mins. Cool

Layer 1
container of cool whip
8oz cream cheese
mix together and spread over crust

Layer 2
1 large box of Chocolate pudding
mix according to directions and spread over layer 1

You can also substitue 2 large cans of blueberry pie filling instead of Chocolate pudding.

Store in Refrigerator
