1 cup dried black beans
1/2 cup boiling water
1 chipotle chili
1 tsp olive oil
1/4 cup minced onion
1 minced garlic clove
2 cups water
1/4 tsp oregano
1/8 tsp cumin
1 16 oz chicken broth
1/4 tsp red pepper (optional)
1 14.5 oz can diced tomatoes with green chiles (Rotel original)
Sort and wash beans, place in large pot, cover beans to 2 inches above beans, bring to boil cook 2 mins, remove from heat and let stand 1 hour, drain.
heat oil, add onion and saute until tender, add garlic, beans chipotle chili, 2 cups water, oregano, cumin and broth. Cook 3 hours until beans are tender, stir in tomatoes/chilis at the end and heat thru.
